Pandemic

The recent swine flu and the not so recent bird flu are related to each other in some way. They are both variants of the Influenzavirus A (correct me if I'm wrong). Scientists started to realize early on that these types of viruses not only infect their hosts and subsequently kill them, but were also able to jump from birds to mammals after undergoing certain mutations. In wrong circumstances, the human race could easily be caught unprepared in a terrorizing pandemic. This documentary takes a look at the history and biology of the bird flu, and speculates on what could happen if the Influenzavirus A were to "give birth" to other variants. This documentary was (probably) made before the swine flu outbreak, but it does a good job at carefully analyzing the matter.

The virus' would still spread if animals still lived side-by-side with us.... Sadly we would not only need to stop eating animals, but also to kill all other living organisms on this planet to have the simplified effect you mention :)

There is a lot of scare mongering here, and sometimes it is difficult to decipher fact from reenactment/bullshit. But overall the general concept is shown and hopefully people realise, and by realising, can help educate others to prevent this.
